Omelette 8 eggs 100 ml cream (3.5 fluid ounces/0.4 cup) salt pepper 50 g ham, cubed (2 ounces) 50 g fresh, grated parmesan cheese (2 ounces)
Lemon oil rind of 2 lemons 50 ml good olive oil (1.8 fluid ounces/0.2 cup)
Herb salad mixed fresh herbs and spices (parsley, dill, chervil, tarragon) 1 chopped shallot 50 ml olive oil (1.8 fluid ounces/0.2 cup) lemon juice
 Omelette Whisk together the eggs, cream, salt and pepper and pour onto a warmed pan, then sprinkle with ham and cheese. Bake the omelette until the mix stiffens, form a 'cigar' shape and serve on a plate. Garnish with herb salad.
Lemon oil Boil the oil and lemon and pour round the omelette.
Herb salad Mix herbs and spices, shallot, oil and lemon juice.
