 2 tablespoons oil
2 cloves garlic, crushed
450 g chicken fillets, in thin strips (14 ounces)
1 egg
250 g rice noodles (9 ounces)
100 ml coarsely chopped peanuts (3.5 fluid ounces/0.4 cup)
200 g bean sprouts (7 ounces)
1 teaspoon sambal oelek (strong chilli sauce)
2 tablespoons soy sauce
1 tablespoon sesame oil
1 bunch spring onions
Prepare the rice noodles, following the instructions on the packet.
Stir-fry the crushed garlic and chicken in oil in the Wok for 2-3 minutes. Add the whisked egg and stir-fry until the egg is cooked. Add the rice noodles, peanuts, half the bean sprouts, sambal oelek, soy sauce and the sesame oil. Mix well and stir-fry for approx. 3 minutes.
Add finely sliced spring onions and the rest of the bean sprouts and stir-fry again for 2 minutes, stirring continuously.
Season to taste with salt and possibly more sambal oelek.
