SCANPAN Omelette Pizza

The birth child of a pizza and omelette. Delicious for breakfast, lunch or dinner!

Prep time: 5 mins, Cook time: 10 mins



8 eggs, beaten

1 tsp oregano

1 tsp thyme

1 tbsp olive oil

4 tbsp tomato passata

1 tomato, sliced

85g fresh buffalo mozzarella

handful of fresh basil

handful of grated parmesan or pecerino cheese

pinch of salt

1. Heat grill to high. While the grill is heating, beat eggs with oregano, thyme and salt. 

2. Heat oil on your SCANPAN Fry Pan, adding seasoned eggs and cook on low heat for 4 minutes. Stirring and scraping sides occasionally until bottom has set.

3. Place your SCANPAN Fry Pan with eggs into the grill for a few minutes to set the top of the eggs. 

4. Remove from grill and place your topping, spreading over the tomato passata, then tomato and eggs.

5. Place back in the grill to melt cheese for a few minutes.
